- 4 cups of vegetable stocks (prepared from boiling a number of cut vegetables with ginger garlic and salt pepper).

- 1 cup of minced green pepper and carrot
- Vegetables like cabbage, beans, yellow and red bell pepper and baby corn, all finely minced
- 2dried black mushrooms cut into strips
- ½ cup bean sprouts
- 2 medium pieces of tofu cut in strips
- 1 teaspoons soy sauce
- 4 sliced spring onions
- Salt and pepper
- 1 cup hot cooked rice
In a pan, boil mushrooms and all other ingredients in vegetable stock over medium heat. Keep aside the tofu, spring onions and rice. Simmer heat and add soy sauce, tofu and spring onions. Add Salt and pepper for taste. Serve in soup bowls with 3 tablespoons of rice at the center.
Vegetable hot and sour soup
Vegetable hot and sour soup is another variation of vegetable soup recipe. It is a Chinese style vegetable soup which is eaten as a snack as well as a starter. Hot and sour soup is a light soup and you can add some fried noodles and tofu into it.
½ litre vegetable stock
1 cup chopped black mushrooms
1 cup canned bamboo shoots
2 cloves minced garlic
1/2 cup chopped spring onions with the green
2 tbsp soy sauce
1 tsp red chilli sauce
1 ½ tbsp vinegar
I teaspoon chilli oil (Take 1 tablespoon red chilli powder in a small bowl. Heat oil. Pour the hot oil on the bowl. Leave for half an hour. Drain the oil later into another bowl to get chilli oil at home)
Bring vegetable stock to a boil and add all the ingredients except the sauces, vinegar, chilli oil and spring onion. Simmer for 15 minutes till all the vegetables are done. Allow to simmer for at least 20 minutes. Add the spring onions, sauces, vinegar and chilli oil and stir well. Simmer for another 5 minutes. Serve the soup with fried tofu or noodles. This fiery and tangy soup can work wonders if you are having blocked sinus.
Vegetable Noodle soup
This vegetable soup recipe is more of a meal than appetizer. With the noodles added to it, it becomes a favourite for kids.
- tablespoon vegetable oil
- 1 chopped onions, chopped
- One large bowl of Vegetables of your choice cut into small pieces ( you can use carrots, celery root, Chinese cabbage, turnips, peas, potatoes, beans, zucchini, shredded greens, babycorn, and coloured bell peppers
- celery sticks sliced
- 1 litre Vegetable stock
- ripe tomatoes
- Salt and pepper for seasoning
- About 1 cup blanched egg noodles
- 1/3 cup(s) chopped fresh parsley
- 1 teaspoon vinegar
- 2 tablespoon tomato sauce
Take a large pan and heat oil. Add the onions and stir well. Now add the rest of the vegetables and cook 4 two minute. Blanch the tomatoes and peel them. Now chop well and mix with the vegetables. Now add the celery and cook till tomatoes are soft. Pour the stock and salt. Bring to a boil, reduce the heat and simmer, partially covered, until the vegetables are done. Now add the tomato sauce, vinegar and pepper and boil for another 2 minutes. Stir in the egg noodles. Bring the soup back to a simmer and cook for 2 minutes. Serve in soup bowls garnished with the parsley.
